Tasting:

Very aromatic nose. Very intense with notes of cider and even beer but still fruity. These aromas are primary aromas that we find in fermenting juices.

The mouth is again very intense and surprising. It is a dry sparkling wine that keeps freshness and fruit. They are not classic bubbles but it is a natural wine that expresses itself differently from traditional methods. In English we could use the word “funky”. Enjoy it chilled as an aperitif accompanied by a platter of charcuterie or oysters.

Terroir

Recent alluvial deposits which spread out near the Lot. Sands and silts dominate but there are also gravels and pebbles of granite, basalt, quartz and limestone.

Winemaking

Mechanical harvesting, bleeding method for a few hours maximum traditional natural vinification at controlled temperature below 18° celcius. Almost at the end of the fermentation we put it in the cold and in bottles. Without added sulphites and without filtration. The natural sugars in the grapes will continue to ferment in the bottle to produce CO2. This is the ancestral method.

Elevage

There is no real aging since the wine is bottled during the fermentation of the sugars. Sometimes we put it in the bottles warm so that the fermentation resumes well.
